Mountain Woman Journals ~ How to make Goats Milk CheeseWell,  most of you know that we have taken on something new here in the wilderness with our milk goats in an effort to aid our Mountain Boy with milk, cheese and all things dairy while still being on the gluten free and casein free diet.

Goats milk casein (milk fat) is different than that of cows milk and often times children and adults with autism and asperger can not have cows milk, but can handle goats milk.

We have started to introduce the goats milk to Austin and he is doing GREAT with it so I am so excited.  I will be able to make our own butter, cheese, ice cream and all things goats milk dairy!!!  Wooohooooing….
This is such a blessing.  Although Daiya makes an amazing dairy free cheese as does Toffuti, we will now be able to eliminate that big expense in our budget.
The gluten free and casein free diet plays a very large role for those on the spectrum.  Most often, those on the spectrum have digestive struggles, behavior and mood swings and bowel troubles.  We have been able to eliminate all of these struggles for our son by changing his diet.
Our desire to get the milk goats was just one more effort to provide our son with the most wholesome options and become even more self sustaining and sufficient.
Below you will find my video on making simple and tasty goats milk cheese.  The other perk is that is doesn't take much time at all and requires a sauce pan, colander, cheese cloth, goats milk and white vinegar.  It is easy and so very good.  Oh and any seasonings that you are partial to can be added after you have drained it.  We add garlic and a bit of sea salt.
Also the whey that you drain from the cheese can be given to your chickens and nothing is wasted.
Goats milk has many benefits which we will continue to touch on.  It adds so much moisture to the soaps that I make and the health benefits are amazing.
